The best agaves are selected after cultivation and cooked in traditional cone-shaped wood ovens. The wood is lit and volcanic rocks are placed on top of it in a pyramid shape, the oven is covered with cloth and earth and cooked for 3-5 days. Once cooked, the pinas are milled with a stone and kept in a wooden tub for fermentation. 400 Conejos Joven is double distilled and has slight smokiness on the palate.

Mezcal BRIJ3 was born through an effort to embrace the customs and traditions of Oaxaca, and the artisans of San Martín Tilcajete, known as "the place where the Alebrijes are born."Each bottle is hand painted by the regional artists of San Martín Tilcajete, with their own designs and colours, making each bottle unique to itself. Aromas of freshly cut grass, chlorophyll, citrus fruits such as lemon and lime, as well as smoked and toasted notes. On the palate it is youthful and strong with balanced acidity, offering a long finish with a pleasant balance of smoke and a fresh lingering herbaceous quality.

Balanced and elegant. Hints of tamarind and pomegranate aromas are followed by herbal tones of fresh mint and dried oregano. Delicate notes of smoke and black pepper lead to a long silky finish.

Naturally fermented and twice distilled in wood-fired copper stills. Nose of tropical fruit, honey, & roast agave; palate offers ginger, cinnamon, & tangerine, with a soft finish.

Fandango is a measured amplification of the finest roast of Espadín agave. The piña is kept into the furnace until it liberates an explosion of tastes and aromas, allowing you to experience the true spirit of mezcal the way the indigenous people of Oaxaca did, 400 years ago. Smoky with additional white pepper and floral notes.

The world's first agave blend made from Blue Weber Agave and Espadin Agave. Aromatically an earthy, light smokiness with a hint of herbs. The initial bite is mellow and fades gently while the full taste and finish elicits the intricate agave flavour and herbal complexity layered with gentle smoke, slight floral fruitiness and low saltiness.

Complex aromas of light smoke, citrus pith and lemon juice. On the palate the smokiness continues followed by orange peel and hints of sea salt.
