We use casks that once contained premium Caribbean rum to finish our 21 Year Old expression. This expression spends four months finishing in Gran Reserva barrels selected by our Malt Master, adding to its distinctive and complex flavour. Unlike most other single malts Glengoyne has been preserving the essence of its flavour for decades by using air-dried barley rather than barley dried using harsh peat smoke. The result is a more subtle, complex whisky in which all of the delicate flavours are freely allowed to express themselves. Sweet with toffee and popcorn aromas. Slightly nutty with fresh green apples coming through. The taste is clean; green apples and grass with a hint of sweet licorice. Sweet and malty finish.

The Glenmorangie 14 Year Old Port Cask Finish has been matured in American White Oak ex-Bourbon barrels before being extra matured in specially selected Ruby port pipes from the Quintas, or wine estates, of Portugal. Extra maturation is a wood finishing technique pioneered at the Glenmorangie distillery. Wood finishing in these port pipes develops Glenmorangie Quinta Ruban into a voluptuous spirit with a complex balance of sweet and dry flavours.

Grants Triple Wood 12 YO is matured in three types of casks. Vibrant with aromas of fruit (blackcurrant and peaches) balanced with a sweet, vanilla maltiness. The taste is sweet and rich with a lovely mix of vanilla, honey and spice; the finish is long, soothing and warm and a vanilla maltiness rounds out the finish.

Gray Jay is hand crafted in small batches by a craft distiller in Niagara Falls. With notes of vanilla and caramel, it's sweet, smooth and complex flavour is designed to be approachable.

This whisky is aged for 18 years in barrel, including 10 months in Brandy Casks. Very aromatic with notes of caramel, blueberry compote, raisins, dates and figs. On the palate caramel, corn syrup and blueberry compote; well grilled flapjacks, crispy bacon and butter syrup. The finish is rich and long, spicy and toasty.

This 15 YO Straight Bourbon Whiskey has been finished in Jamaican pot still rum casks. On the nose: cornbread, cocoa nibs, tobacco leaf, and an abundance of maple syrup. The palate delivers dried apricot, and sandalwood, with a nutty richness and a finish of toasted coconut, holiday spice, and toasted oak.
