Our 2012 Pfeiffer Shiraz is vibrant purple-red in colour, with an inviting nose of dark fruits and spice. The palate is rich and robust, with lovely depth across the mid-palate and a lingering spice on the finish.

On the palate, notes of red current, raspberry, Mariposa plum, cranberry and vanilla. Well - balanced with subtle oak flavour and possessing soft tannins.

Three Swallow is made from a mash of malted and unmalted barley, then triple distilled in traditional copper pot stills. Matured in mainly 2nd and 3rd fill American oak casks. Pot Still spice combines with crisp barley character. Delicate herbs give way to green banana and grapefruit while a nutty note of marzipan reflects the wood contribution of specially selected casks. An initial taste delivers smooth mouth-coating barley followed by an eruption of green apple and citrus notes. Herbs and spicy flavours are complemented by a touch of cedar wood for extra complexity.

With its white liqueur having a white chocolate richness, and the black of warm coffee and whiskey, the whole rounded-off by a chocolaty, nutty finish.

Shot in the Dark is crafted from a blend of grapes from vineyards carefully selected by John Quarisa. The grapes were fermented to produce as much colour and flavour as possible. This wine is a deep brick red, with notes of blackberry and blueberry with a hint of cinnamon spice. The palate is oozing dark black fruit with ripe tannins and well integrated oak.

This is a blend of 70% Single Malt and 30% Single Pot Still whiskeys. Zesty spice aromas, with black pepper and peach notes. The pot still spice comes through on the palate, with dark chocolate and bourbon oak notes. The finish lingers pleasantly with hints of oak and butterscotch.

An ode to Donegal whiskeys of days gone by, the Legendary Silkie is a beautifully balanced blend of the finest double and triple distilled single malts and grain whiskeys. Non-chill filtered, and incredibly soft with a stunning natural sweetness. The 2% peated malt in the blend adds a kiss of peat smoke.

Nose: At first honeyed malt, nuts and dark chocolate followed by marzipan, all spice and fruits. Taste: Clean and mellow honey malt and then the taste complexity reveals itself - rich dried fruit, spices, nuts and sweet oils. Finish: A pleasant gentle wood with honey sweetness fading slowly.

To the nose, lemony citrus with hints of green apples, vanilla/sugar. The taste & the finish are bitter, bitter almond, malty oak. The finish fades to bitter notes of fresh oak. Young whiskey, light and straight forward. Would probably be a very good whiskey to incorporate marmalades recipes.

The palate is beautifully weighted and mouth-filling with excellent fruit richness and silky texture, wonderfully framed by fine, chalky tannins. The wine is up front and immediately appealing with plenty of delectable flavours.

Youthfully charming and attractively lifted, the bouquet shows green rockmelon, nectarine, jasmine and lime peel aromas, followed by a succulent palate that is bright and light. It is fresh and lively with lovely fruit purity, finishing long and mouth-watering.

Youthful and powerfully expressed, this delectable Shiraz is packed with black/blueberry, dark plum, cedar and spice note with lifted floral complexity on the nose.

The early floral yet biscuit flavour reflects the grain whiskey, while the soft spicy notes can be attributed to the pot still whiskey in the blend. The citrus flavour is contributed by the malt. Finally notice the nutty or even marzipan note combined with distinctive vanilla in the finish imparted by the sherry and bourbon casks used in maturation.
