This Five Oak Cask Release is matured in a combination of three different types of virgin oak (Irish, European and American), in addition to ex-bourbon and ex-sherry casks. The finished result is a whiskey that is equal parts complex and smooth.

Knappogue Castle 12 YO is an exceptional single malt made exclusively from malted barley. Oyster Bay Sparkling Cuvée Brut is made from 100% Chardonnay grapes which give the wine elegance, finesse and minerality. We harvest the fruit early and use neutral yeasts to accentuate the Chardonnay varietal character. The lively bubbles in the wine are a result of natural secondary fermentation, which brings to life the delightful and refreshing character.

Aromatically a complex interplay of nutty maltiness, woodland fragrances and spice, with hints of honey and vanilla. On the palate a distinctive mellow maltiness, a touch of sweet oil, spiciness - and again those background notes of honey, vanilla, toasted wood. On the finish the sweetness gently fades, mellow maltiness and mild woody notes linger.

Three Swallow is made from a mash of malted and unmalted barley, then triple distilled in traditional copper pot stills. Matured in mainly 2nd and 3rd fill American oak casks. Pot Still spice combines with crisp barley character. Delicate herbs give way to green banana and grapefruit while a nutty note of marzipan reflects the wood contribution of specially selected casks. An initial taste delivers smooth mouth-coating barley followed by an eruption of green apple and citrus notes.
