We harvest the fruit early and use neutral yeasts to accentuate the Chardonnay varietal character. Sadashi is a Japanese whiskey with a golden colour. The nose has a woody scent with hints of vanilla and flowers. Aging occurs in in ex-sherry and ex-bourbon casks, and then delicately finished in Mizunara oak casks. Mizunara is one of the rarest and most expensive types of oak in the world, and gives a delicate touch of spicy flavour and sandalwood to this remarkable spirit.

Initial aging has occurred in sherry, bourbon and Hogshead casks and then finished in Mizunara Oak. Aromas of honey, wisps of chocolate, dry grass and bonfire smoke. On the palate caramel, coffee, gently smoke, seaweed and vanilla. Long finish with notes of salted caramel.

Cellar selection pinot noir has a concentrated black cherry and dark berry aromas which follow through to the palate where dark berry fruit and cherry flavours are supported by soft tannins. This is a ripe and deeply coloured food wine, designed for early drinking but capable of cellaring for 3-5 years. Serve with hearty pastas, duck and New Zealand lamb.
