The best agaves are selected after cultivation and cooked in traditional cone-shaped wood ovens. The wood is lit and volcanic rocks are placed on top of it in a pyramid shape, the oven is covered with cloth and earth and cooked for 3-5 days. Once cooked, the pinas are milled with a stone and kept in a wooden tub for fermentation. 400 Conejos Joven is double distilled and has slight smokiness on the palate.

This Sangria is produced like wine and during fermentation lemons and soft fruit that are grown within the vines are added, giving the natural fruitiness to the wine.

Rich morello cherry and plum flavours are accented by mint, orange peel and sassafras notes in this expressive red, which has soft tannins, juicy acidity and smoky finish.

The colour is coppery amber and the nose offers heady spice aromas of nutmeg, cardamom, and vanilla, rounded out with caramel and citrus notes. On the palate the taste is warm and buttery with butterscotch notes and has a long, smooth cognac finish.

Our Merlot Les Jamelles is a very complex, rich, long and fat wine. With its dark colour, it displays aromas of crushed black fruits (blackberries, black currants, and cherries), jam and cooked fruits as well as smoky scents (peat) and spicy perfumes (cinnamon, thyme). This wine is round, rich and long-lasting on the palate with mature tannins on the finish. It is a well-balanced easy-drinking wine.

On the palate, this wine is complex, rich, long and fat. It displays aromas of crushed black fruits (blackberries, blackcurrants, cherries) and jam. The tannins are plump and well-integrated. Unlike many Pinot Noirs grown in the Pays d'Oc, this wine is not dominated by heaviness or an excessive over-ripeness.

Pale pink with lychee highlights. The succulent nose expresses intense grapefruit and red berry fruit aromas. On the palate, the attack is forthright and highly expressive, marked by the grapefruit notes found on the nose. Beau Joie Brut is aged on lees for a minimum of 4 years. When Beau Joie Brut is disgorged, we add a very small amount of dosage to each bottle in order to highlight the fruit characteristics, while preserving lovely acidity and citrus notes.

Colour: pale pink colour, with salmon-pink lights. Nose: it provides a mixture of red fruit (currant, raspberry, and cherry), citrus (grapefruit) and grenadine aromas, enhanced by a touch of menthol. Palate: the attack is frank, held together with a freshness which is well-balanced and round.

Sophie Valrose is a beautiful, pale salmon coloured rose. Elegantly fragrant with aromas of wild strawberries, citrus and delicate floral notes. Round and creamy on the palate, with refreshing acidity and a silky smooth finish

Brilliant ruby colour. Aromas of dark cherry, cardamom, raspberry, red tea notes and a swirl of red licorice. This medium bodied wine is in good balance with moderate and refined tannins, a light snap of acidity, all backed by a kirsch note on the juicy finish.

A blend of Monastrell, Tempranillo and Cabernet Sauvignon. The different varietals are vinified separately. The grapes are hand - picked, crushed and destemmed prior to fermentation in concrete vats. Malolactic fermentation takes place in Hungarian oak barrels. The wines are barrel aged for 6 months. Balsamic aromas and spices on a background of ripe fruits.

Mezcal BRIJ3 was born through an effort to embrace the customs and traditions of Oaxaca, and the artisans of San Martín Tilcajete, known as "the place where the Alebrijes are born."Each bottle is hand painted by the regional artists of San Martín Tilcajete, with their own designs and colours, making each bottle unique to itself. Aromas of freshly cut grass, chlorophyll, citrus fruits such as lemon and lime, as well as smoked and toasted notes.
