This Five Oak Cask Release is matured in a combination of three different types of virgin oak (Irish, European and American), in addition to ex-bourbon and ex-sherry casks. The finished result is a whiskey that is equal parts complex and smooth.

Dark Amber in colour with aromas of walnut husks, chocolate-mocha, black liquorice, red apple and chai. On the palate French vanilla, pecan, dried fruit, cut wood, earthy-herbal and leather. Chocolate nut bar creeps into the finish. Rich and velvety.

Knappogue Castle 12 YO is an exceptional single malt made exclusively from malted barley. Triple distilled one batch at a time in traditional, onion-shaped copper pot stills, the whiskey is then aged in bourbon oak casks for twelve years. Aromas of biscuit and peppery spice. Well balanced flavours of fruit and mild spice. Smooth finish.

This unoaked chardonnay is aged completely in stainless steel tanks. Light and fresh. Crisp notes of green apple, peach and citrus are found on the nose, with a lively acidity on the palate.

Bourbon barrel aging helps develop the full character of this whiskey. On the nose new pencil shavings, light rose petal, fresh rain on pine while the taste offers warm toasted oak, fresh peeled grapefruit, zesty wood spices, clove spiciness and a wisp of fresh mint.

A medium-bodied, smooth, easy-drinking Baco noir with fruity flavours of dark fruits. Notes of black currant, blackberries and sweet spice linger in the finish.

Our Story Charming White is refreshing and fruit forward with notes of citrus and pear.

Aromatically a complex interplay of nutty maltiness, woodland fragrances and spice, with hints of honey and vanilla. On the palate a distinctive mellow maltiness, a touch of sweet oil, spiciness - and again those background notes of honey, vanilla, toasted wood. On the finish the sweetness gently fades, mellow maltiness and mild woody notes linger.

100% Baco Noir VQA. Flavourable wine with notes of dark roasted coffee, chocolate and liquorice.

The key to the intense flavours and spicy aromas in this wine are the mature grapes and modern technology which allows for strict temperature control during fermentation: its gentle agitation of the wine extracts more colour and tannin from the skins, and the partial pressure this vessel is under during the time of fermentation allows higher concentration of fruit flavours to remain in the wine. Finally, this wine undergoes malolactic fermentation in the barrel room, which stabilizes its red colour and enhances its firm tannic finish. This Cabernet Franc is best served with pasta or red sauce, barbecued foods, roast beef or lamb.

It is an ideal balance of cool-climate acidity with a fragrant orchard fresh aroma and a delicate peach bouquet. It makes a perfect complement to appetizers, seafood, cheese and light meats"

This Baco Noir and Merlot blend is deep ruby red in colour with an inviting nose of dark cherry, plum and mocha, this wine is fruit driven with a hearty rich mouth feel and balanced finish.

This Auxerrois, Pinot Gris and Pinot Blanc blend is medium straw in colour with an enticing nose of stone fruit with a tropical hint. This wine is richly textured with notes of pear and toasted almond and a pleasant lingering finish.

Aged in 2,500 litre oak casks, our LOLA Merlot has aromas of wild cherries and blackberries with fine tannins.

Vidal Blanc and Chambourcin grapes are used for this Rose. A delicate frizzante with hints of strawberries and blood orange flavours.

A medium red wine with a leather & tobacco aroma and a distinctive tannic finish. Pinot Noir is one of the oldest varieties cultivated by man. This wine is best served at room temperature with grilled or roasted red meat and game, ham, roast pork or grilled Atlantic salmon.

This is a medium bodied wine, dense with firm tannins and a wild cherry bouquet.

Very fine bubbles spiral upwards, through this brilliant yellow straw coloured wine. The bouquet of apricot, yeast and ripe apple, with hints of honey, are followed by tropical fruits on the palate and a refreshing pink grapefruit finish.

Clear and bright with a fresh clean aroma of honeydew melon, gooseberry, green apple, lemon grass and a touch of tropical fruit. This fresh and lively wine has juicy flavours of tangerine, lemon drop, green apple & honeydew, all on a light to medium-bodied frame.

Aromas of mango and melon, bright lemon zest, honey crisp apple and honeysuckle. The palate has the same strong tropical fruit notes with some white currant character. Refreshing, with zippy acidity and an off-dry sweetness.

Aromas of red cherry, cranberry, raspberry and fig. Fresh and juicy on the palate with flavours of cherry and raspberry with slight toasty notes.

This wine showcases aromatics in the form of blackberry jam, fresh mint leaf, black pepper, cooked blueberry, black cherry, sweet tobacco (similar to Oscuro Cigars), ripened plum and blackcurrant, with a subtle undertone of butter, courtesy of malolactic fermentation. Once allowed to breathe, notes of leather and cedar become more pronounced, suggesting potential tertiary aromatics. The palate mirrors the nose, with notable flavours of black cherry and blackberry, alongside butter and toasted almond, with a hunt of dark chocolate on the extended finish.

This cool climate Chardonnay displays beautiful orchard fruit aromas of apples and pears, as well as a buttery, oaky character. It is full bodied and elegant with nice acidity and a dry finish.

Three Swallow is made from a mash of malted and unmalted barley, then triple distilled in traditional copper pot stills. Matured in mainly 2nd and 3rd fill American oak casks. Pot Still spice combines with crisp barley character. Delicate herbs give way to green banana and grapefruit while a nutty note of marzipan reflects the wood contribution of specially selected casks. An initial taste delivers smooth mouth-coating barley followed by an eruption of green apple and citrus notes. Herbs and spicy flavours are complemented by a touch of cedar wood for extra complexity.
